Bednar appointed to national school nutrition committee

DENTON —
Dr. Carolyn Bednar, Texas Woman’s University professor
of nutrition and food sciences, is one of only nine nutrition
professionals in the country selected to serve on the School
Nutrition Association’s Research Committee.
“This committee
focuses on identifying and facilitating research on issues
relevant to school nutrition,” Dr. Bednar said. “Current
issues we are working on include national nutrition standards
for schools, school wellness policies, labor recruitment and
retention, food costs and environmental sustainability.”
As a TWU professor,
Dr. Bednar has directed a number of graduate student research
projects related to these topics. She currently is working
with Dora Rivas, division manager of food and child nutrition
services for the Dallas Independent School District, to develop
a pilot School Nutrition Specialist Internship Program that
will begin this summer. The program will train a selected
number of TWU graduate students for administrative positions
in school nutrition programs.
Dr. Bednar has
taught at TWU for more than 15 years and served as the department
chair for nutrition and food sciences from 1997 to 2006. She
has held leadership positions in several national and state
organizations, including chair of the Association of Nutrition
Departments and Programs, director of the Texas Dietetic Association
Foundation and president of the North Texas Dietetic Association.
She also has received several awards, including the Leader’s
Award from the American Association of Family and Consumer
Sciences, the Wimpmiller-Guggenheim Award for an outstanding
international project from the American Dietetic Association
Foundation and the Distinguished Scientist Award from the
Texas Dietetic Association.
Her research has
appeared in several publications, including the International
Journal of Educational Research, the Journal of Child Nutrition
and Management, the Journal of the American Dietetic Association,
the Journal of Nutrition Education and the Texas Association
of Family and Consumer Sciences Research Journal. She currently
serves as the associate editor of the Family and Consumer
Sciences Research Journal.
