Description of research activities:   Dr. Ryu is interested in the fate of mycotoxins and their toxicities during various food processes. He also researches incidence, distribution and biological activity of endocrine disruptors in foods. In addition, Dr. Ryu investigates the role of food-borne toxicants in development of cancer and the reduction of heterocyclic amines and other carcinogens in foods.
