Meredith Arthur, MS, RD, LD
Ms. Meredith Arthur graduated from Texas Christian University with BS in Nutrition and Dietetics with Magna Cum Laude followed by an MS in Nutrition from Texas Woman’s University in 2007. Since 2001, Ms. Arthur has served as clinical dietitian at Baylor All Saints and Las Colinas Medical Center as well as adjunct faculty at Texas Woman’s University and Texas Christian University. She currently serves as Clinical Dietitian for Aramark at Baylor All Saints in Fort Worth where her duties include, assessment of patient nutrition status and creation of nutrition care plans to meet their needs based on their disease state including but no limited to HIV/AIDS, diabetes mellitus, cancer, cardiovascular disease, gastrointestinal disease and disorders, renal disease, and neurological disorders. She also provides patient education on nutrition related to disease as needed. Ms. Arthur brings a wealth of knowledge and experience in dietetics and nutrition education.
Amy L. Goodson, MS, RD, CSSD, LD
Ms. Amy Goodson graduated from Texas Christian University with BS in Speech Communication followed by an MS in Exercise and Sports Nutrition from Texas Woman’s University in 2006. Over the last several years Ms. Goodson has actively participated in nutrition and health education at a number of institutions such as Ben Hogan Sports Medicine/Jim McLean Golf School, Ben Hogan Sports Medicine – Executive Health Program, Texas Christian University Athletics, Texas Rangers Major League Baseball Team/Dallas Stars National Hockey League Team, and USA Track & Field. In addition, she has frequently served as adjunct faculty both at Texas Christian University and Texas Woman’s University. Ms. Goodson brings unique element to our program that brings together nutrition and exercise and health.
Lakshmi Ramdas, PhD
Dr. Lakshmi Ramdas graduated with an MS in Nutrition from Oregon State University in 1993 and PhD in Nutrition from Texas Woman’s University in 1998. During her graduate training, her research areas included the role of micronutrients on bone metabolism and the effects of omega-3 fatty acids in cardiovascular diseases. Since her graduation, she has devoted her career exclusively to teaching nutrition. Over the years, she has taught at Texas Woman’s University and Tarrant County College a diverse array of nutrition courses which include Introduction to Nutrition, Nutrition and Diet Therapy, Medical Nutrition Therapy, and Cultural Aspects of Food. She continues to serve as an Adjunct Instructor at the Tarrant County College. Dr. Ramdas not only brings a wealth of teaching experience, but also complements expertise of the other two instructors.
Shanil Juma, PhD
Dr. Shanil Juma graduated from Oklahoma State University in 2002 with a PhD in Nutritional Sciences and a Graduate Certificate in Gerontology. He currently serves as Assistant Professor in Department of Nutrition and Food Sciences. His publications in the area of bone metabolism and functional foods exceed two dozen full papers and over 50 abstracts. He has extensive experience in face–to-face as well as online teaching a variety nutrition courses such as Nutrition and Gerontology, Nutrition and Bone, Introductory Nutrition. More recently, he has developed one of a kind graduate course in Nutraceuticals and Dietary Supplements that he offers online. Dr. Juma brings to this team a wealth of knowledge and experience in online teaching, course development in a strong research background.
Chandan Prasad, PhD
Professor Chandan Prasad graduated from Louisiana State University in 1970 with a PhD in Microbiology/Biochemistry. After 8 years at the National Institutes of Health in Bethesda, Maryland, as Fogarty Fellow and Senior Staff Fellow, he returned to New Orleans to join the faculty of LSU School of Medicine where he served as Professor (Medicine and Neuroscience) and Vice Chairman (Research) in the Department of Medicine at the Louisiana State University Health Sciences Center in New Orleans until 2006. He is currently Professor and Chairman of the Department of Nutrition and Food Sciences at Texas Woman’s University in Denton, Texas. The current focus of Dr. Prasad's research is on the role of nutrition in metabolic diseases. He has authored/co-authored over 200 papers in the area of appetite regulation, obesity, and nutrition. He holds three US and international patents for treatment of obesity and alcoholism. He serves as Editor-in-Chief of "Nutritional Neuroscience" and Editor-in-Chief of "Current Topics in Nutraceutical Research."
